Chocolate hazelnut truffles

Ingredients:

4 oz unsweetened baking chocolate (4 squares), chopped fine

1 cup Splenda

1 tsp. unsalted butter

2 Tbsp. hazelnut meal or your choice in coatings

Chop the chocolate finely and place in a medium bowl, along with the Splenda. Heat the cream until it just begins to boil. Pour over chocolate and mix of Splenda and add the butter. Stir with a whisk. Add vanilla extract and mix well until everything is melted and well blended. Transfer to a bowl, cover and refrigerate at least 2 hours until it hardens a little.

To finish your truffles Sprinkle hazelnut flour in small dish. Place about a tablespoon of ganache on the palms and roll slightly to form a ball. True truffles are irregularly shaped and not perfectly round, do not worry too much. Furthermore, the more you handle the ganache over the heat your hands may begin to soften. You can also consider using latex gloves for this part because they get a bit messy. Drop each truffle in hazelnut flour, and roll up which is completely covered. Repeat this process until it is used throughout the ganache. Refrigerate again for an hour so the truffle can be configured.
